I have a really good friend who's coming for shabbos (dinner and sleeping) and has very recently been put on the Total Elimination Diet. She hasn't even been able to add anything yet. She's offered to make a dish, but I'm still stuck. I need food that she and everyone else can eat (I'm G-d willing having 9 guests + us) for dinner. Zu, I know you must have some good recipes... Help me out girls! (Deadline: Thurs aft, cuz I'm grocery shopping then) --Lorien |

Going to try and get the list cuz she doesn't have a scanner, and I don't have a fax. I'm going to get her to fax it over to the school so I'll have it by tomorrow and I can let you know. Basics she told me: No red meat No gluten No soy No peanuts, cashews or pistachios No dairy (obv.) No potatos, peppers, mushrooms and two other veggies I can't remember What I'm planning on making She said yams were ok, so I'm making them with sea salt, pepper, garlic powder and rosemary. Salmon maybe this week instead of gefilte fish. She's making a brown rice dish I'm going to make soup regardless without the potatos and peppers. I add soupmix for flavouring normally, and have no clue how to make it as good without it. So she can decide whether she wants that. Some sort of chicken. Anything seem off or any other ideas? |

my base diet is: chicken, white potatoes (none others), zucchini, olive oil, salt, pepper, apples, bananas, pears. Thats it. I have added in red meat (he is fine when I eat, but gets bloody diapers when he does), oat, carrots, celery, onions. Oh and brown rice. Thats it so far. I am surpised she can eat so much! Usually one protein, a starch, a veggie, and a fruit. |

My favorite veggies: cube squashes - green & ellow and carrot (can also add pepper, but I guess, not this time) Drizzle w/ olive oil, slat, pepper, garlic powder. (enough oil so that veggies won't burn) Bake covered on 300-350 untill ready (20-30 min) Great warm, ok cold. PS for better soup flavor, add more chicken. You can also omit potato - the soup will be just fine. Just add extra of other veggies. PPS black pepper is a peper too, Find out if she can have pepper spices. |

I add a leek to my soup. It adds a very good flavor to the soup. It's very sandy, so make sure to wash it well. I also add carrots, parsnip, zucchini, a spanish onion and a bone-in chicken breast. The only seasoning I use in the soup is salt. |

oh- fyi- I would stay away from spices (especially garlic). Maybe call her and ask her for her exact can eats... details make a diff. Personally, I just don't eat out anymore. |

chicken- good for everyone! take the chicken (with skin on) and seperate the skin a bit. Dice- zucchinis and sautee. stuff under the skin. put chicken in pan, cover, and bake till done. Very yummy! sweet potatoes- simple- cut thinnly in slices, place in pan. drizzle olive oil over, salt, and pepper. bake uncovered. yum (wish I could have sweet potatoes!)! sooup- I mamish just put a ton of chicken (half a pack- thats a lot for me... I usually put one theigh and one leg in), carrots, zucchini, celery, and if she can have onion. a little salt and pepper. Actually is super yum. hth |

Our soup normally consists of a whole cut-up chicken, carrots, zucchini, leek, onion, potato, red pepper & celery root. It's a very full soup. Maybe I'll try seasoning with just salt instead this week. I can always add chicken powder later. I'll leave out the potatos and peppers. I'm going to get her to fax me the list so I'll give you more details soon. |

It went well. Food turned out pretty good, but I conked out after main course and DH served the very yummy chocolate mint brownies leftover from last shabbos (thanks again happyduck!) instead of the cherries I bought. Husbands... I made: Salmon with a lemon dill sauce Chicken soup with no powder and left out the veggies she couldn't have That zucchini stuffed chicken recipe (thanks zu! Very tasty!) Yams Green beans And she brought a brown rice dish. It was all very good. thanks for all your help guys! |
