Well, my mother always says that no matter how little she cooks, it's always too much because after a cup of wine, three kesaysim of matza and two of marror no one has an appetite.

She serves: falsche fish (fake fish; we don't eat fish on Pesach), chicken soup with Pesach noodles (since my husband doesn't eat gebrokts; otherwise it would be matza balls, which I make the best in the world of, modestly speaking), chicken and flanken from the soup (no roasted or baked meats on Seder night), apple kugel (second night of Pesach it's Esther Kaisel - a potato kugel), beet salad, celery root salad, carrot salad, cucumber salad and apple compote or pears in wine for dessert.

We usually have soup (also with the egg noodles)
Salmon or gefilte fish
Potato kugel (or layered sweet potato/potato kugel)
Turkey or Brisket
Cucumber salad
Ratatoulle

I really wish that my family didn't keep gebrokts! I finally get married to someone that doesn't keep it, but we're going to my family for all of Pesach! Maybe next year I'll finally be able to eat some matzah pizza :)

we make meat soup and main is meat from the soup. i might be having company who doesnt eat g'broks so i would make potato kugel to go with it, and fish as an entre, v'zehu, no one needs more after eating all that matza

I don't exactly follow a recipe.

I generally just mash up some boiled sweet potatoes, add several eggs and put it in the oven until it's solid.

Then I add the white potato layer which consists of:
Several sauteed onions
grated potatoes (use the food processor!)
salt
olive oil
eggs

Cook till brown.

Sometimes I make a mashed potato kugel, all the ingredients are the same, except I use mashed potatoes and fry the kugel in a frying pan and use a plate to flip it over.

Sorry the ingredients are so basic, at my parent's house I can only use non-processed stuff.

meatballs from spice and spirit- yummy! You take a couple of tomatoes and a pineapple and puree. Add a bit of sugar water (or reg. sugar) and throw the meatballs in! YUMMY! I usually make those for sader. The sauce is also good on roast and on chicken. Serve over mashed potatoes. yummy. Also super easy- take a roast. Layer the pan with potatoes. roast on top. salt and pepper if you use. top with carrots and onions and sweet red wine. Bake covered. Yum

Sara, I thought you people were egg-free because of Tev. How about Swiss rösti instead of potato kugel? Cook up some potatoes in the peel, cool (best if you cook the potatoes the day before, you can even peel them if you want or use leftover boiled potatoes), shred (not grate) and fry in plenty of schmaltz (or butter). Can add shredded onions if you want.
