vimple is a yekkish minhag. (my bil is a yekke, they are not doing upsherin, but are doing the vimple)
i think if you're not chassidish you can do what ever you want/like from the chassidish minhagim. i was at a non-chassidish upsherin a few months ago- they did do the aleph-bais/honey thing, but the kid was shy, so he didn't do too many letters. they didn't do hachnasas lecheder/wrapping in tallis- unless they did/will do it later.

with our sons, we went to the yeshiva in the morning, talit and all, then for the haircut, and then had the party at night(actually with son #2, his birthday came out on friday,so we did the party on sunday! the next day was erev sukkot!). The only people invited to the yeshiva were grandparents. Everyone else saw them at the party with the haircut.

4 hope, my husband is also sefardic, the upsherin thing is becoming quite popular in sefardic circles too! I see alot of people doing it now.

Honestly, I love doing the upsherins, I think its a beautiful minhag ,whatever way you do it, it gives the boys a good start. And I don't even mind being told that my son looks like a girl with that ponytail!
