Sorry for the cross-post, but I didn't want this to be missed. I really need advice! I was about to start cooking this morning but realized last night that we have a pre-diabetic guest coming. R"H dishes are usually sweet. What do I do?? Any suggestions of what to make? Here's what I'd been thinking for that meal, but probably need to revise: appetizer - no idea Chicken - either a sweet cranberry/apple chicken, or chicken with a honey/OJ glaze - either one is probably too sugary/sweetened for my guest Stuffed peppers - stuffed with rice (and veggies?) Squash kugel - problem is it is sweet; you cook the squash with sugar before making the kugel Salad - Will leave some "undressed" for her Dessert - baked apples, maybe in puff pastry, maybe plain. And probably an apple cake for DH to nosh on throughout yom tov - it's one of his favorites! Not sure what dessert to make that she can eat So what does everyone think? Will either chicken be okay for the pre-diabetic guest? (I can post actual recipes so you can evaluate.) Should I just add meat to the stuffed peppers so that will be the entree she can eat, and she'll just avoid the chicken. Help please!! P.S. I did leave a message for the guest asking her to call me to discuss the menu; I told her I wanted to be sure she could eat and wouldn't go home hungry :yum |

Before anything, I think its smart your talking to her. Everyone has different triggers. Honestly all of them could be a problem or none of them. |

You're right, thank you. She called me back and said that really almost anything is okay in moderation. She said she sticks mainly to proteins and salad, and that cooking the chicken with sugar or honey will be okay. She said that ka'h since she is pre-diabetic as opposed to full-blown, that eating it won't cause her an averse reaction c"v, so that if my recipes call for a little bit of sugar or honey in them, she'd be okay. |
