I actually make our own tom. soup because Frei is allergic to corn so I have to make completely from scratch.  It does call for bread crumbs so I use enjoy life bread for it.  So yummy toasted!!  I would love bread recipes!!  Tev is fine with GF oats and we are willing to spend money on it for him to wash on shabbos.  Right now what we have done is we buy the special matzah pesach time in bulk.  I spend a fortune but its so worth it as 3 out of 5 of us are gluten free.  We are about to go completely gluten free too cause I am wondering if the wheat is causing behavioral issues with Zu.  There is a gluten free bakery in ny but the challah has eggs :(
We don't do tvp cause frei is allergic to soy and i have never seen one gluten free.  Where do you get it?

OK, if eggs are a problem, I'll give the GF bread recipe in eggy and eggless versions. You also gave me the idea of trying oat matzo meal in place of some of the flour to make something that is actually motzi. No idea how it would work or what the proportions would be, of course - or how much oat vs. other flours you'd need to make it motzi (CYLR, I guess). But now that I've thought of it, I'll have to pick up some more of the oat matzo meal on payday.

Anyway, here are a few of my favorite recipes (my family will thank you for this; I keep meaning to type them up and keep forgetting):


Bread Flour

2 c brown rice flour
2 1/2 c white rice flour
1/2 c potato starch
1 1/3 c tapioca starch
1 1/2 c sweet/glutinous rice flour
2/3 c cornstarch
4 t xanthan gum


Bread Machine Bread (for 1 lb machine)

2/3 c warm water
2 T brown sugar
1 t yeast
3 T vegetable oil or 2 T oil plus one egg
2 c flour
3/4 t salt

Place water, sugar, and yeast in the pan of the bread machine. Let the yeast dissolve and foam for ten minutes. Add the oil, (optional egg), flour and salt to the yeast. Use the Rapidmix setting (or whatever your machine calls it; on my machine this takes 45 minutes, start to finish).


Waffles (may be doubled or tripled)

2 eggs, well, beaten (egg replacer might work, but I haven't tried it)
1 c milk or 1 c soymilk or 1 c water plus 1/4 c buttermilk powder
3 T vegetable oil
3/4 c white rice flour
1/2 c sweet/glutinous rice flour
1/4 c buckwheat flour
1 T baking powder
2 t sugar
1/2 t salt

MIx eggs, milk, sugar and oil in a large bowl or pitcher. Stir in remaining ingredients and mix until blended. Make waffles (might also work for pancakes).


Hamburger pie

Filling:
1 lb hamburger
1/2 t chili mix (I get it in bulk from the health food store; feel free to substitute at will)
salt as necessary
the equivalent of one can of tomato soup

Topping:
2 c GF bread flour
4 t baking powder
2 t sugar
1 t salt
1/2 t cream of tartar
1/2 c pareve margarine or 1/2 c shortening (*)
2/3 c soymilk (**)

Sautee hamburger in frying pan with spices and salt. Add to the bottom of a casserole dish, without the grease, and stir in tomato soup. Put in a 450 degree oven to get hot & bubbly.

Sift together flour, baking powder, sugar, salt, and cream of tartar (***). Cut in shortening until mixture resembles coarse crumbs. Add liquid all at one time ands stir until the dough starts pulling together.

Turn dough out on lightly floured surface and knead together enough that it doesn't fall apart. Pat or roll to roughly 1/2" thick, and cut out with cookie cutter, or just cut into diamonds with a knife. Once oven has come up to temperature and filling is hot and bubbling, arrange biscuits on top and bake for 15 minutes.

* I detest the flavor shortening gives to biscuits and piecrusts, so I can't vouch for the results if you use it, but the base recipe I adapted this from calls for it, so it ought to work. Just adding that as a possibility if you prefer not to use pareve margarine.

** I haven't tried this with almond milk or the like, but it should. Whatever milk substitute you're used to working should be fine, and it might even work fine with water. I just haven't tried doing that, so I can't vouch for the results.

*** That's what the recipe says, but I never sift anything. I stir the dry ingredients together with a wire whisk and it works just fine.

we use oatmilk :) I will def. try the hamburger with ground turkey for tev.

know any good subs for buckwheat?

Is someone allergic to it? Buckwheat is GF and safe & all and makes great pancakes. If you don't want to bother with it, though, just use any heavy GF flour you like, or just go half white & half glutinous rice flour. I've done all sorts of messing about with this recipe, and it's always good waffles.

Which reminds me, I have an absolutely heavenly matzo meal waffle recipe that I made during Pesach with oat matzo meal (we bought the waffle iron just before Pesach and hadn't opened it yet). I'll try & dig it up & post it tonight or tomorrow.

yeah- tev is allergic. We are gluten free cause Tev seems to be allergic to all gluten grains (others too). The docs suspect he is a celiac but we can't test him as we can't have him eatting anything with gluten cause he has a serious reaction. I tried buckwheat once and one lick and he got hives. Frei is also allergic to wheat and maybe other grains.

The waffle one sounds awesome!!

Drat. The Passover waffle recipe I remember wasn't in my standby Passover cookbook (A Pesach Sampler: from appetizer to afikomen by women's branch uojca, 1979), so I'm not sure where I got it. Probably some website or other, but this one sounds familiar. I do hope it's the same one, cos they were absolutely delicious.
