This is one of my favorite recipes - adapted from Moosewood Cooks At Home
1 onion, chopped
5 sundried tomatoes, chopped
1 can diced tomatoes
1 or 2 cans black beans
1/2 cup cilantro, chopped
1 clove garlic, chopped
curry powder or cumin to taste (approx. 1 tsp)
pinch of cayenne or 1 tsp chopped jalepeno pepper
2 tbsp oil
whole wheat instant couscous (optional)
fat-free sour cream (optional)
Heat oil at bottom of big soup pot. Add onions and garlic, cook until soft. Add spices, canned stuff with the liquid, and sundried tomatoes. Cook 5 min. If you want a heartier soup, add half a cup of water and 1 cup of whole wheat couscous, and cook another 5 minutes. Add cilantro, cook another minute. Top with fat-free sour cream if desired.
Very tasty, high in fibre and good stuff, low in fat, cheap and filling, and you can have dinner in 15 min.
