Luckily for me, we belong to a family that doesn't believe in making a big deal of seudos on Rosh Hashana. We're also big into traditional foods. Also, after eating the simanim at night, we have hardly any appetite and during the day davening ends so late that no one has energy to eat too much. Menu: Night: simanim –apple in honey, fish head, beets, carrots, leek, gourd, dates, black-eyed peas? salmon chicken soup square lukshen honey-mustard chicken farfel tzimmes compote Day: gefilte fish goulash spätzli salad apple crisp Night: shehechiyanu fruit simanim salmon soup with lukshen schnitzel tzimmes farfel plum torte Day: gefilte fish schnitzel or goulash beet? salad farfel compote or fresh fruit Night: fish soup chicken yerushalmi kugel salad apple crisp Day: eggs cholent kishke potato kugel deli meat leftover side dishes compote |

we dont either do major, but i need variety and my family and guests need food, so this is a rough sketch of my menu appetizers chicken soup - done gefilte fish in sauce fruit salad? meat balls? mains pickled meat - done garlic chicken cholent/gruenkurn garlic roast hawaiin chicken crock pot roast honey mustard mayo chicken sides apple kugel - done potato knish - done apple cranberry meat roll doughless deli roll franks in blanks brocolli kugel carrot kugel give or take, i have a feeling a lot of it wont get done, but whatever, so far the soup, pot knish, apple kugel and pickled roast are done. I havent figured out desserts and salads... |

Apple crumble? I dunno about a recipe. I just slice up apples (peel them, slice 'em, stick 'em in the pan...enough apples for whatever size pan I'm using) and the topping is instant oats with brown sugar and margarine. I think it's around a cup of oats to 1/3 c. brown sugar & 1/3 c. margarine. You can get away with less margarine if you melt it as it mixes better. I just stick all the coating ingredients in a bowl and mash with my hand, then pat it down on top. Bake at about 350 until it smells done. |

I finally sat down last night and made my menu. It's subject to change without notice.
:D We don't use mayo or vinegar on RH, which limits the amount of salads I can make.
:( I haven't decided yet what to serve each day. Fish Roasted cauliflower soup Salads Tri-colored pasta salad Cucumber dill salad Vinaigrette (made with lemon juice instead of vinegar) Corn salad Avocado salad Thai slaw salad Chickpeas Cole slaw (Shabbos) Main Dishes Mushroom stuffed chicken Tomato basil chicken Asian style silver tip roast beef Cholent Sides Rosemary potatoes with shallots Sesame broccoli Sweet and sticky green beans Cold cut roll (I have to figure out what to put inside, b/c I usually make it with mustard and sourkraut. Unless I save it for Shabbos.) Mushroom roll Roasted garlic asparagus Desserts (I decided not to go too heavy on the desserts b/c shul ends late and noone will be in the mood after a full meal.) Upside-down marsala apple cake Banana caramel cream pie Marble chiffon cake |

My MIL's Apple Honey Chicken (without which it would not be Rosh Hashana!) NOTE: This really only turns out well in an oven-proof crockery dish, although Pyrex is OK. If you need to use foil or metal, it doesn't caremelise nicely, but is still pretty good. 1) Slice onions thin to cover bottom of dish 2) Place chicken portions on top of onions (bone in or boneless) 3) Core and slice apples thinly (I use granny smith, but sweet works too) and arrange around chicken. 4)Mix honey, small amount of lemon juice, paprika, garlic powder, onion powder (plus any other seasonings you fancy) 5) Pour over chicken, apples and honey. 6) Bake at 350 until done (usually about 1 hour for bone-in pieces). Start covered but uncover for the last 1/2 hour at least. May need basting. Reheats well. Very elegant and quicker cooking with boneless skinless chicken breasts. |
