Realeez - love the way you incorporated the simanim into the dishes! It's tempting to redo my menu plan, although I do make the simanim the main meal for second night, anyway.

Me too - although microwaving spaghetti squash is only less work if it doesn't explode, jump out of the pyrex dish, plaster itself to the walls of the microwave and burst the door open!
So, fortunately, I still have the butternut squash, but I think I'll bake it in the oven, tomorrow, and eat it plain, instead of making kugel (which was the plan if I could cook the squash tonight) because I won't have time.
And now, I have to think of another side dish for tomorrow night - grrr!

I make mine by throwing it in the oven whole till cooked through, cut it in half, take out seeds and than add marg, salt, and pepper. The kids love it. Very simple.

I've always cooked it in the microwave, and never had any problems. I think it is because I was doing so many different things at once that I didn't prick it as deeply as I should have. Also, I was trying to use the microwave to cook while the oven was already in use.
Oh well, I guess this is my excuse to simplify my menus even further!

We are home for the two lunches, and hosting a bunch of people for each meal. I'm going pretty traditional this year.The menu will be basically the same both days:
Homemade round challahs
Apple and honey
gefilte fish
caesar salad
chicken soup with matzah balls
stuffed turkey breast, brisket (chicken and sweet and sour meatballs for second day)
yerushalmi kugel
mashed potato kugel (thanks, zuncompany!)
veggie side--haven't decided yet, maybe glazed carrots
honeycake and coffee cake for dessert

K, finally made a menu. It will be spread out over the 6 plus meals.
Brisket
pepper steak (peppers from our garden)
chicken wings on the grill
deli roll (for lunchs)
meat pie (for lunchs)
mashed sweet potatoes with carmalized onions
stuffed acorn squash (stuffed with veggies and quinoa)
stuffed mushrooms (still working on the stuffing)
brown rice (for the adults an onion and mushroom with red wine sauce to be mixed in)
spinach lasagna noodle roll ups
meatball soup
zucchini soup
oat pumpkin challah (wheat free)
cinn. sugar water challah
Apple cupcakes
choc. coconut milk ice cream
cookies in cream ice cream
choc. oat cookies
cranberry oat cookies

Tongue one night. Out for Shabbat (but I'm bringing a few things). Since all our guests cancelled/changed plans and it's just us I think I'm going to really really simplify it. Fancy challah, tzimmes, meatballs...all stuff the kids will eat and I can do most of it around my work schedule (yes, I'm working erev chag...) I had bought a roast but now I don't think we'll need it.

Tongue is in the crock pot as we speak, challah I can mix the dough tonight and put in the fridge - braid & bake tomorrow. Meatballs in the crock pot Wednesday morning. Tzimmes & noodles on the stove tonight...the dairy kugel for Shabbat will have to be baked in the microwave because I need the oven pareve until Wednesday! Stir fry & chicken for salad on stove tomorrow night (only because I forgot to take it out to defrost today). And all the simanim.

For the one R"H seuda (second night) that I'm staying home for:
gefilte fish
chicken soup
brisket
farfel
honeyed carrots
pareve ice cream, if I feel like having dessert

Same thing for Friday night
For Shabbos day:
gefilte fish
egg salad and cucumbers
cholent? (do you think I can cook it on Wednesday and keep it refrigerated till Friday?)
corned beef
more pareve ice cream

1.5 cups flour
2 cups sugar - I cut down to 1.5
1 t cinnamon
1/2 t salt
1 t baking soda
2 eggs
1 c canned pumpkin
1/2 cup oil - I did half applesauce

(next time I will double the muffin part bc I had extra filling)

filling:
3-4 apples-peeled and sliced
1/2 c sugar
1 T corn starch
1 tsp lemon juice
1/4 tsp cinnamon

topping:
1/4 cup sugar
2 T flour
1/2 tsp cinnmon
2 T margarine

put filling ingredients in saucepan on low flame until apples are cooked.

Combine muffin ingredients. Fill tins 1/4 full, add 1 tsp apple, put more batter until 3/4 full, sprinkle topping . Bake 30-35 mins at 350.

I typed this on my iPod so it is in short form so ask questions if u have! Btw I subbed half applesauce for oil
