Thanksgiving time- post your menus!

So, its just us but as usual we are going for all the trimmings of what dh and I grew up with made safely for koshrus and allergies.

Turkey
stuffing
cranberries
pareve mac and cheese
mashed potatoes
ratatouille
accorn squash

pumpkin pie
sugar cookies
pumpkin spice cookies

I wanted to make my mushroom soup but the mushrooms are out of this world expensive everywhere I looked!!

Nothing! I'm eating out. :)

Ok.. but I am preparing a salad. I'm using one of my rebbitzen's recipes for her dressing.

lettuce (boring)
arugala mix (fun!)
avocado
grape tomatoes
alfalfa sprouts
carrots
nuts
pretty pepper (maybe orange for the holiday)
cucumber

dressing:
eggless mayo (woo hoo for Trader Joe's!!)
lemon juice
sugar
parsley
salt

immersion blend it.
mix it with the salad for presentation, but I'm still iffy on this one. Some people are anal about their dressing.

no CHK turkey in the butcher today :( so no turkey...but last year i did turkey drumsticks, sweet potato pie and greenbean mushroomdine just for fun. (neither i nor dh ever celebrated thanksgiving as a child) the kids have half day- no general studies, so dd1 is going over to her best friends house for an afternoon playdate and eating there.

Not living in the USA and with a dh who never heard of Thanksgiving, we are going to pass on this. However, I insist on serving a cranberry dish every year the Shabbos after Thanksgiving. I'm debating between cranberry salad (which I love and no one else touches) and cranberry-apple crisp (which dh loves and I think is just ho-hum.)

my kids got all excited when they saw the cranberries. Everyone but me in the house loves them. Dh always buys like 30 bags that last me the year cause I can't find them year round.

1/4 Cup marg
1 Large Onion, chopped (optional)
1/8 cup all-purpose flour
1 tsp salt
3 cups rice milk- oat and soy milk work as well as non-dairy creamer
1/2 lb (8 oz) noodles uncooked
1.5 packages of toffuti american chopped

melt marg and sautee onions till clear. Add flour and salt and stir. cook a min. Add in "milk" and bring to a simmer. Add in noodles. cover and continue simmer. Stir every few mins. Cook until thickened and noodles are fully cooked. remove from heat and add in the toffuti. Mix till all melted. We sometimes like to put breadcrumbs on top and bake for a few mins for a crunchy crust. Depends on my mood. We play with the noodle type.

My mother used to send me 10 bags a year. They freeze so well.

What is in the cranberry salad?
This is what my mother calls a real American recipe - because it uses almost exclusively canned or packaged stuff and requires almost no cooking skills. :ha

Cranberry Salad
1 bag cranberries
1 c. sugar
1 c. water
½ pkg. red jello
1 c. crushed pineapple
1 can mandarin oranges, drained
10 oz. can strawberries in syrup (I use plain frozen strawberries, with no syrup)

Cook cranberries with water and sugar. Add rest of ingredients.

Here's our menu.

Green salad
Turkey
Cranberry relish
Turkey gravy
Stuffing
Baked yams with pineapple and craisins
Green bean casserole

No clue about desert yet. I don't want to have it because it's so much food already and then we'll have dessert for Shabbos, but DH seems to want it. So maybe a lemon pie. I don't care for pecan or pumpkin pie at all.

So far I've made the cranberry relish and the yams. I'm hoping to finish everything but the gravy before I go to bed tonight.
