favorite soup recipe

a few soup recipes

Just saw these and it inspired me to ask- whats your favorite soup recipe?

My family its Zucchini soup and its SOOOOOOooo easy.

sautee 3-4 onions. Add in 8 zucchini cut. cook a bit. Cover with water till zucchini are covered. cover and simmer for about 45 mins. Stick in immersion blender and blend. Salt and pepper to taste.

I was just going to say we love zucchini soup too - similar recipe but less onion and we add carrots. I keep the peel on the zucchini and the soup has a great colour!

My kids beg me to keep the peel on. they say its a special year round zucchini soup and without the peel is special pesach soup :)

carrots are a great idea. What do you do with them? chop, dice?

I chop 'em any which way since at the end of the day they get pureed. The original recipe that I use came from a food processor cookbook which says to finely grate or something but why bother? To impress the immersion blender? So not worth getting the Cuisinart dirty!

Dh reminded me of another favorite-

2-4 onions sauteed until clear. Take 6ish tomatoes (small ones you want more) and cut them into 1/8ths and throw them in. Let them get soft for a few seconds and than give the pot about two inches of white wine (if your in a good more 3). Let it cook a bit more and than add water to cover tomatoes. I give it about half an hour and than blend it up with my immersion blender adding salt and pepper to taste.

With a yummy grilled cheese (or pareve grilled cheese in our case) its SOOOo yummy. Its good with paninis as well.


(also, if you skip the water and just blend it makes a great topper for meat, meatballs, chicken, turkey, and fish!)

parve Cream of Brocoli Soup

basically you make a roux of flour, oil, and garlic, add 1/4 cup water and cook till it becomes thick. add frozen broccoli that was precooked, water and spices. blend with immersion blender. (you can take out some brocoli pieces and add it back after blending.

Bean soup

Cauliflower soup

Parve Onion Soup

'Instant' Soup:

1 bag of pre chopped soup vegies
1 packet of soup beans (the long narrow ones that come with the spice packet)
optional: grated carrot, onion, garlic
spices

put vegies, beans, and spices in pot with water. if have time saute carrot, onion and garlic and add in. spice to taste.

oh, and my husband actually likes Osem's meals in cup. I put in more water than required and serve it as soup.

Our favourite is butternut squash soup. It is kind of sweet, but very good!

Peel a butternut squash, scrape out the seeds and then cut it into chunks (they are usually about 2 lbs.)
Peel and core 3 - 4 apples or pears, (either is good) cut into chunks
Add about 6 cups of your favourite broth
You can dice 1/2 onion and add that if you like (optional)
salt and pepper to taste
Simmer 20 minutes or until the squash and fruit are soft
Puree and serve.

I take pumpkin, zucchini, onion, (tomato at times), one or two carrots, potatoes and celery and boil all till soft in salted water. Then blend with an immersion blender. Just take out celery sticks before you blend leaving in only the leaves. (They add taste but make the soup horribly stringy if you leave them in when blending.) Comes out really yummy. I've served it at Sheva Brochos and stam a regular school day lunch. Good for all occasions.
