I grill indoor all winter. I marinate whatever vegies and meat I want in a mixture of oil, lemon juice, Italian seasoning, fresh garlic and soy sauce.
I shmear the steaks, burgers and chicken nuggets with Mikee Sesame Teriyaky sauce, sometimes I marinate it for a few hours.
I recommend dark chicken cutlets. They stay moist and taste delicious.

Just sayin': salmon! I love to take filets, roll them in crushed peppercorns (black, white, allspice, anything!) until they're well covered, and then, let it burn! :-D


I also love making this easy dressing to go with the veggies:
- 1 cup plain yoghurt
- 1 tsp cardamom seeds, coarsely crushed
- 1 inch cube ginger,slice and crush it like you would do with garlic, you want just the juice
- 4 tsp grated cucumber
- 1 tsp sugar
- salt and pepper to taste

This is really refreshing with grilled squash or potatoes, and also great with any spicy casserole or rice dish in winter time!

We grill every Sunday.

Our favorite marinade is plain ole Italian bottled dressing. I sometimes add to it lemon juice, lime juice, a little garlic powder and a little onion powder.

We do al haesh all year long. Its my kids' favorite but dh suffers it.

Cheap is kebabim, hot dogs and hamburgers, wings or just potato and onion.

For us or guests So. American steaks and eggplants, onions and other veg.

Sometimes shnitzel or whole chicken breasts.

The steaks need nothing as the meat is very tender. I put olive oil and paprika in a plastic plate, cut an onion in half and stab the root end with a fork. I dip the onion in the oil and spice and paint the meat with it. I do this with wings too.

For chicken I often make barbecue sauce or curcum sauce. We don't like so much chicken on the bone grilled.

BBQ Sauce Rikal (sorry I don't measure)

Tomato paste
Good mustard
Silan or dark brown sugar (just a little to cut the edge off the tomato taste)
Good vinegar (apple)
Very fine chopped onion
EVOO
crushed garlic
salt, pepper
Optional variations -Add sweet chili sauce (mild) or schug (charif)
Mix well.

Homemade kebabim

1/2 ground beef
1/2 kg ground chicken or turkey
Handfull of chopped fresh cusbara
fine grated onion
Curcum
Paprika charifa
(left over ground horseradish from Pesach adds an amazing taste)
salt, pepper

Can you guys tell I do not own a food processor yet :(
Shape into kebabim and put on the grill until done but not dry.
They can be done in the pan or oven in sauces as well if you add egg to hold it together.

How do you do schnitzel on the grill? My kids LOVE schnitzel but in the summer I rarely cook inside cause the house gets to hot.

My favorite and simplest way to prepare schnitzel is to pound it fairly thin and marinate in a lemon-pepper marinade (2:1 olive oil:fresh lemon juice, salt and pepper) at least half an hour.

I rub the meat in whatever spice and oil and grill it fast. If it is on the fire too long it gets dry. How fast it cooks when kids are hungry is a big plus.

They make the fire. They wrap whole potatoes and onions in foil and throw them in. When the meat is done they take out a potato and onion and you have a meal. If it is the main meal I will make salad as well.

For al haesh (bonfire as opposed to clean city grill) If you open a wire coat hanger and string potatos on it, make a closed ring and put it in the fire the potatoes cook super fast. My kids think the mangel, the real grill with charcoal is only for the beach and public parks. At home you collect wood, make a fire and bring the finjan for coffee as well.
