Ideas needed

I'm trying to think of ideas for three situations:
1) lunch that doesn't need refrigeration (could do a cool-bag with ice pack, I guess) and doesn't require hamotzi - easy to eat in lap. So, not sandwiches, nothing that needs heating, ready-to-go in one container.
2) Supper ideas that can be frozen, eaten cold or quickly heated (no microwave), nourishing and filling but easy to eat (at home).
3) Shelf-stable snacks (other than fruit) that is very easy to handle and eat. So far, we have clementines and rogelach. Good, healthy foods that can be "picked at" would be best.

Not sure if you can do PB but if not sunbutter or soy butter on crackers for 1 with fruit and cut veggies.

Dinner ideas depends if you are willing to really sit and cook for a few days and freeze things. Than there are loads of things I can give you.

Snacks- those oatmeal cookies with the raisins if you think about it are relatively health- oatmeal is packed with good stuff as well as the raisins. We keep avocados handy cause they are easy to cut in half, a little salt sprinkled, and its a great snack eaten with just a spoon.

Thanks! I don't think the people I'm making this for will do the "butters" but I bet they would do crackers with "things" and the person who needs the snacks might appreciate some healthier crackers. I think cut hard cheese, and maybe a tub of cream cheese on ice, would work.
Dinner - yes, I plan on bulk-cooking, and packaging in individual foil pans to be stuck in the refrigerator to defrost and reheated at supper time either in a pan or the toaster oven. So far, I thought of shepherds pie, meatballs and rice, meatloaf, lasagna. I'm sure bread won't be an issue - there is usually something in the freezer. I'd be interested in non-beef ideas, especially the side dishes.

Pasta salads, throww in anything with pasta and dressing, can be made meat or dairy. Easy fast and filling.

I usually add frozen veggies the night before and by morning its all defrosted and ready to eat.

Thanks UTMJ - I have a pot of pasta boiling now, with the idea of making a big pasta salad for tomorrow. I hadn't thought of adding the frozen peas and corn, but that will be quicker and nicer than chopping salad!

I know you said no sandwiches, but is that bc of refrigeration or bc of messiness? There is such a thing as a sandwich sealer that, lets say you make a jelly sandwich, would cut the crusts off and seal it as a circle so there is no mess....

Empanadas are along those lines as well.. fill your favorite filling (meat/chicken/veggies/spinach/corn/potato/kasha) and they are easy to eat. Potato and kasha do not need to be reheated and will do just fine in a cooler with an ice pack. The beef ones also have egg and olive in them, but you can put anything you want... I can give you recipes if you are interested...

I always like hard boiled eggs.. you take the shell off of them easily at home as well before heading out. I do this whenever I go to the beach. Goes well with grapes!

The sandwiches is so there is no need to wash for hamotzi and bentch afterwards, which can be awkward.
Empanadas sound a bit like cornish pasties - a pastry shell with a filling - is that right? I'd love recipes for pareve or dairy ones. And if anyone has a recipe for cheese and onion cornish pasties I'd really appreciate it - I used to make these all the time, but I don't have the recipe for them anymore!
We also take hardboiled eggs everywhere!

Empanadas are spanish kreplach! I bet if you made a mix of cheese and spinach they would be SO good baked.

Oooh, knishes might be good. I used to make a whole bunch of them and fill with loads of different things and send with dh for lunch.

My mac and cheese recipe freezes well. I usually add fake sausage browned to it and a veggie to make a one pot meal.

Stuffed shells. If you get those big shells- I posted I believe a recipe both dairy and meat that can be used. http://s9.zetaboards.com/Jewish_Womens_Forum/topic/232325/1/ They freeze so nicely and with a nice salad can be a good meal!

Chicken I just cook 3/4 of the way and freeze.

Dairy- I do mafalata noodles, cook them and than mix with tomato sauce, cheese, and spices. Throw it all together and freeze. Sometimes we would add cottage cheese as well. Than when you are ready throw it in the oven and the cheese will get all yummy.

Thanks! If the weather stays cool, I realized that soups would be good for suppers, because you can always reheat from slightly frozen if need be (and I have some lentil soup in the freezer already!)
Does anyone know if cooked brown rice freezes well?
I'm really getting a lot out of bouncing these ideas around - it's helping me problem-solve around a lot of related logistics (like when we take the frozen stuff, there can be a non-frozen meal for that night).

Excellent - I'm really excited, because I love brown rice but it takes so long to cook. It's a great way to make quick lunches for me in individual portions, too!

I *assume* you own a crock pot. If you can get some 6 or 8 or 10 hour recipes you can put up something fresh every other day...and if you time it right there will be no need to freeze/reheat as it will still be hot. (My crock pot sees more use during the week when I'm out for 9 hours a day than it does on Shabbat...)

how about wraps for lunch? cream cheese and smoked salmon, omemelettes, cold cuts, you name it! and when you cut it in pieces, it also looks really nice.

Marion - the hot supper food is for someone else who has neither microwave or crockpot (and I can't loan to them because of kashrus differences).
4hope - wraps sound great - does anyone know whether any of them are definitely only mezonos and not hamotzi?
