If it's for your MIL, could you guys buy her a small (3qt?) crockpot to heat single servings/servings for 2? I was actually thinking of you cooking at home and taking it over still hot/warm.

Thanks, I thought of giving her our little one, which we hardly use any more, but I'm not sure she wants to deal with learning about a new appliance right now. Also, the instructions that came with mine said not to use for reheating cooked food, so unless she was to cook from scratch, I don't think it would help much. Can't take it over warm, because it would be cold by the time it arrived! Also, dh is seeing her every day, meeting at her house to drive over, so cold or frozen is the easiest way to get the food to her.
DH took the pasta salad with him today, so we'll see who, if anyone, ate any, and whether they like it.
It seems ridiculous that while they are making important decisions I am sitting here worrying about food (I'm helping with other practical stuff and also with research and decision-making, but I'm not right there with them every day). But, I know that otherwise they won't eat properly.

4hope - wraps sound great - does anyone know whether any of them are definitely only mezonos and not hamotzi?
B) wraps are great, endless variations. the ones we have here are definately mezonot, but of course i can't remember the name...

btw, blintzes are a possibility too, as are borekasim and the like.

For empanadas.. I buy "discos" in the ethnic food section. They are circles. Add your favorite filling, close them up to make a half circle (use water to glue them shut. Then twist to close), then bake 25-30 minutes. Add whatever you want. Just whatever goes in gets cooked first.. ie spinach gets cooked, a meat would, etc. Nothing raw.

Thanks, Barbie. I guess the ready-made pastry squares would work, too. Kind-of like a non-flaky boureka?
You guys are great! I'm feeling like I have a lot more options now. And, if the food is tasty and varied, then hopefully it will tempt all involved to eat something!
Barbie, have you ever put shredded cheese inside?

Puff pastry squares are great - you can fill it with anything, bake and enjoy! I've put in cooked ground beef, mashed potatoes and mushrooms, cheese with veggies and tomato sauce.

This is not ridiculous. Proper nourishment and good tasting home cooked food that is kosher is a blessing for your mil - you are amazing and I'm sure the family appreciates this more than you realize.

1) lunch that doesn't need refrigeration (could do a cool-bag with ice pack, I guess) and doesn't require hamotzi - easy to eat in lap. So, not sandwiches, nothing that needs heating, ready-to-go in one container.

a. No lettuce or tomato salads - bulgar, rice, wheat, etc
b. Rice cakes + avocado, tuna or hard cheese
c. Cut hard veg + boiled egg whole(can stay out relatively long if not hot)
d. Felafel balls and salad, bread is not really necessary
e. Bourekas, small pizzas prepared, sambusak
f. Pancakes/latkes, not the sweet AM variety.
g. Healthy muffins made with WW, oatmeal, fruit, etc
h. Hard cheese, fruit, crackers
i.Do they sell frozen prepared bourekas. parve shnitzle

2) Supper ideas that can be frozen, eaten cold or quickly heated (no microwave), nourishing and filling but easy to eat (at home).

a. Individual kugel or latke portions
b. Prepared shnitzel refrozen and soy substitutes
c. Meatballs/patties
d. As above made with fish or veg - fish sticks or such
e. Clear broth, veg can be added when reheating, matza balls also freeze well
f. Remember to freeze bread either sliced, rolls or pita

3) Shelf-stable snacks (other than fruit) that is very easy to handle and eat. So far, we have clementines and rogelach. Good, healthy foods that can be "picked at" would be best.

a. Dry biscuits (petit beurre type)
b. Rice cakes
c. Dried fruit and nuts, leather
d. Granola or sesame bars
e. Small snack crackers
f. Small cans of olives or pickles
g. Soy pudding
h. Granola or cheerios to munch dry or eat with milk

Rikal, thanks so much for the extensive list. I'm going to copy it for dh to take as a "menu" for dh to show his parents, and they can indicate what ideas appeal to them.
Realeez - thanks, I think I'll try that and then freeze them. Then, dh can take frozen ones with him for everyone, and they'll be defrosted when they need them (makes it easier to prepare when we don't know if he'll go any particular day).
ZC - thanks for the encouragement!
