Dinner ideas for mid-week guests

Anyone have any ideas for me? I want nice but not overdone. Not sure about BBQ since I like dh to do that and am not sure of his schedule... I would be okay with dairy or meat dinner ideas.

Shepherds pie or Lasagna are both great because you can prepare them ahead of time, and warm them through when it's time to eat. Also, if your guests are late, or you don't sit down when you expected to, then they won't spoil if they stay in the oven.
You could serve with salads (also can be made earlier in the day) or just plain steamed veggies. Nice salads would make the more ordinary shepherds pie or lasagna seem fancier.

If you want dairy, and don't mind cold food, you could do poached salmon (wrap in foil and bake in oven) and serve with couscous salad, and green salads. Could serve with bourekas, which are easy to prepare.
Another milchig meal I do for guests (OK for the ILs!) is "make your own falafel" - I buy the frozen falafel balls, and all the dips, salads and pita bread. All you need to do is heat the falafel. Everyone has fun trying out the different dips, and passing things around and comparing the flavours ("which eggplant dip do you prefer?") is great for getting the conversation going.

ETA: A lot depends on who your guests are. When we host the SEED bochurim (yeshiva boys) I always serve something with lots of cheap ground beef, so meatloaf or shepherds pie kind of thing. When I have other people, I might go more towards the milchigs for a light summer supper.

In the vein of make your falafel I sometimes do tacos with ground beef or ground turkey and then people put in what they want. Ortega has an OK.

And I saw that the Presidents Choice brand now has taco shells that are hechshered and parev (can't remember what hechsher) - they do all kinds of kits, but the plain shells are the hechshered ones (should be cheaper than the imported Ortega ones, and the Compliments brand is DE). You can get just the seasoning packets with the OK at No Frills (assuming also at Sobeys) in the kosher aisle where the pretzels are. And the PC salsa is really good, too!

Thanks for all the ideas! I really like taco and falafel bar ideas but since we are now down to one guest, I am going to make a lasagna and salad.
