Just one recommendation if you have never made quinoa before. Rinse it really well with cold water in a fine sieve before cooking, until the water runs clear. There is a natural powdery coating on quinoa that makes it slightly gritty/bitter if it is not well rinsed.
I did not know this - thanks so much for the recommendation.

I have a great sweet potato pie recipe that freezes well! I made 6 for the freezer before the baby was born and even my super picky kids LOVE it!

Realeez - please share - sounds like the kind of thing I'd love to have on-hand for shabbos meals. We are getting a bit bored of roast sweet potatoes, and my sweet potato kugel isn't reliable (ie sometimes everyone eats it, other times I'm the only one!)

I have to sit down, chart and analyze. Hopefully over the next few days. I am contending with my dd's birthday party the week before and it's menu.. November is crazy busy... and I love every second of it!

Here ya go!

Sweet Potato Pie


2 lb. sweet potatoes
3/4 cup sugar
1/2 cup brown sugar
1/2 cup margarine - cut
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup milk (or pareve sub)
1 tsp. vanilla
3 large eggs

1 deep dish pie crust or 2 regular pie crusts


Beat hot sweet potatoes until smooth. Add margarine a few pieces at a time until melted. Beat in remaining ingredients except eggs. Add eggs one at a time. Spoon into crust(s). Bake for 60 to 65 minutes at 375°. (I often double or triple this and freeze them - freezes well)

It's a creamy texture so it wouldn't serve as nicely but if you want it more like a souffle, it should be fine esp if you make it in anoven-to-table dish.

I've made crustless "pies" in foil pie shells and they seem to bake the same. And, if you leave it for slightly longer in the oven, I think it makes it a little easier to serve, especially with a pie server. Or, make it in a regular dish and serve it scooped out with a spoon, more like mashed potatoes.
