What are people making? I have so many options open I have not fixed my menu yet.

I remember those liberating days of suddenly being able to make whatever I want! In fact, with ds1 passing his dairy trial (though we go easy on the plain milk and hard cheese because of the lactose) I have to keep remembering that dairy suppers are easy - they can all have the same thing. I actually made pancakes last week with real milk (now that I'm not eating eggs and wheat, there was no reason to stick with the rice milk so I could eat them too). Kids loved them!
As for Purim Seuda. We are having just my MIL and her aunt. I think I'll probably just make a pot roast with root veggies, and serve with salad. Maybe I'll be organized enough to make kugel, which we can eat for shabbos as well. Hoping my MIL will bring hamentashen for dessert, which we can serve with fruit and pareve ice cream. I'd love to be able to make soup with kreplach, etc, but as I usually haven't finished the clean-up from Shabbos by the end of Sunday, I'm keeping it really simple for the seudah.

I guess I have to decide milchig or fleishig by the time I do my grocery shop tomorrow huh? Yeah, yeah, I know, seudah is "supposed" to be fleishig, but honestly, coming on the heels of Shabbat I'm not sure it will get eaten. (Everyone here except DH prefers dairy.) So probably chalavi. Fish as a main, and a pasta/cheese dish, and a quiche. Noodle kugel with cheese for a change. And I promised DH if he agrees to dairy that I'll make strawberry-banana ice cream in white chocolate cups for dessert...

So, we decided we are going to have fun with this.

Challah knots in a challah basket
fried kreplach with honey mustard sauce to dip in
buffalo wings
fire poppers
homemade french fries
homemade onion rings
homemade falafel
Israeli salad
pareve pizza (toffuti mozz. on some plain and some with falafel as well as topping)
homemade chummas
pasta salad

dessert will be banana breads (small individual ones) and strawberry banana ice cream

I'm thinking of telling my husband that we will eat home..... his sister started the drama of wanting to host the meal motzei shabbos and we should all go to my inlaws the next day for the afternoon meal..... I personally have no koach to deal with her or her kids who will be running around on sugar highs....... my parents invited us for the morning meal. I have some meat in the freezer from last time it was on sale, I'll cook that in sauce, buy sabra knishes and a slice of fish for my husband and we are done.....

We had plans to go out for the purim seuda, but almost at the last moment it turned out that my kids are not welcome there ; (. So....
Now I have to come up with my menu plus quality entertainment for the kids...
