I'm only home for the night meals so I am making a roast, zucchini kugel and roasted potatoes, sweet potatoes and and butternut squash. We still have soup for tonight from Shabbos. I'll put together some sort of salads too. |

zucchini soup with chicken balls mashed potatoes roasted potatoes pineapple chicken quinoa chicken schnitzel stuffed eggplant with veg and quinoa stir fried veggies sloppy joes (for last day) Avocado dip lettuce, onion, avocado salad Israeli salad applesauce pearsauce kiwi icies watermelon cut pineapple cut We are home all meals. |

We're winging it! I'm not really able to do much in the kitchen, because it hurts to stand and bend. DH is taking instructions, and we're figuring out what he can make easily. 1 pot roast done, 1 chicken to be cooked for tonight. He's working on boiling up a big pot of potatoes to be eaten whenever we need them, and I have a couple of prepared kugels to supplement. Plenty of salad, veggies, etc in the house, so we'll make do. |

Meatballs with mashed potatoes chicken soup (knaidels if they come out half decent without eggs....) beef stew, green beans....maybe Day 1--- out night 2 chicken soup roast potato dish of some sort Day 2 ---lots of guests Sloppy joes and mashed pot veal cutlets chicken cutlets corned beef Mango salad apple kugel potatoes paprikash |

well It was a process---I only made 1/2 a recipe because I expected it to fail. I subbed 1/2 a cup zucchini for 2 eggs, then used 1/2 c Matzah meal, 1/3 c oil and 1/2 c seltzer. I mixed as if I would be making regular kneidels, and let it sit for about an hour in the fridge. They formed beautifully. I put them in boiling water and they even floated up, but after 5 minutes they disintegrated. (I only made about 5 small ones, because I wanted to see what would happen, I pretty much expected the results I got) I formed the rest into about 15 cookie sized balls and decided to bake them. I baked them and they tasted pretty decent. I threw three of them into the soup to boil, where they fell apart again. Well, I was still pretty determined to have knaidels, so the next night, i took whatever was left, out of the fridge , and only put them into the bowls of hot soup. THEY WERE GREAT THAT WAY!!!! My baby had about 4 of them, they were not large, and not as fluffy as egg ones, but totally passable. they even floated in the soup, and were not heavy like phone books. I'm totally going to try again. So the moral of the story----Bake, not boil=success. |
