I'm not sure exactly what we're having for Shavuos, but DH is making blintzes (yum!). I made a great recipe for dinner last night that could work for Shavuos. It was a broccoli pesto--basically the same ingredients as a traditional basil pesto (olive oil, garlic, etc.) but with broccoli instead of basil. I didn't add nuts (although you could) and I added parmesan cheese afterwards, so you can make it parve. I served it with whole wheat spaghetti and it was great!

I have to get my head out of the sand about this.
Usually, we do at least 1, if not 2 dairy/fish meals. This year, it's all going to be meat, because I'm not eating dairy, soy or fish for the baby.
So, I'll make a meat roast, a turkey roast (if I find one) and some chicken. I'll leave the oven on and cook as I go. Sides will be a combination of bought kugels, roast root vegetables, rice, and frozen veg. Desserts will be parev ice cream and bought cakes and cookies.

what is sushi salad?
I have an actual recipe that I sort of use lol! It's basically sushi rice with rice vinegar, drop of sesame oil, soy sauce, minced ginger and garlic. I cut up nori into small pieces along with tiny pieces of veggies. It's sushi without the work!

Peel and slice up butternut squash into fries and mix with a bit of olive oil, cayenne pepper, chili powder, oregano, paprika, salt and pepper and bake until roasted. The original recipe is from KBD lightens up.

Zucchini soup recipe too, please!

Does anyone have a good recipe for blintzes that can be made dairy free or at least cholesterol free? (or greatly reduced?!) Also.. scones... dairy free? I've googled, the latter, but would like to know of a tried and true recipe. At the Mother's Day brunch I went to, there were dairy scones, (I made), blintzes (with sour cream, etc), and French Toast made with over a cup of sugar.. My mom is pre-diabetic, in spite of the fact that she is one a strict diet since her mid 20s and eats incredibly healthy. I'm trying to help her find some traditional type recipes, made healthier. She's 100% pareve.

Zucchini Soup (doubled version in brackets)

1 onion, chopped (still 1 even if doubled)

3 tbsp. margarine (still 3 tbsp.) -- i usually use less and use oil

1 carrot, peeled and cut into chunks (3)

4 medium zucchinis (8)

3 tbsp. flour (6)

6 cups boiling water (12)

4 tbsp. instant chicken soup mix (8)


Melt the margarine in a large pot. Sauté the onions until golden. Add the carrots and sauté for a few more minutes. Cut off ends of zucchini but do not peel. Slice into chunks. Add to saucepan. Stir and cook for 1 minute. Sprinkle with flour. Add remaining ingredients; partially cover and simmer for 1/2 hour. Using a hand blender, puree the soup until no chunks remain.

bagels w/ lox & cream cheese...leftovers from the bris
whatever leftovers there are from tonight

It also looks like I might have company I wasn't counting on (or even expecting!)...so I hope there will be enough food!

That's my reaction, too!
I'm not up for guests, either. Though I did acquire a couple of single girls as guests this past shabbos, but they were really easy to please and did not stay long after the meal.
And, I'm operating on the "I can cook it on Yom Tov" mode - there's just too much to get done on no sleep to be able to cook 2 days of yom tov meals ahead of time, factoring in needing extra for the kids to eat early both nights (because davka then they manage to stay awake and want another supper with us, so it's like 4 meals for the adults, and 6 for the kids).
Challos are rising - first time since long before Pesach, and that's my big accomplishment lichvod yom tov. The rest I'll figure out as I go.
