How does one make an omelet? I have no idea how. I finally found a way to make eggs safely without the kid's reacting. Granted they are upstairs on the other side of the house, all downstairs windows and doors open, and fans going but I was really missing eggs. I would love an omelet. I hadn't had an egg since Tev was six months old until this summer. He will be 7 next week... boy did I miss eggs! |

Omelette - mix up eggs really well. Cook in hot pan till mostly done (don't stir - do like a pancake) add filling when halfway cooked if adding filling (cheese can be added as-is, mushrooms, onions etc need to be fried first) then flip eggs in half to enclose filling and finish cooking. Yes, I can do eggs, but have trouble with my digestion if I eat too many/too often. Try to limit myself to eating straight-eggs (as opposed to baked into something) to no more often than twice a week. I'm having trouble getting enough protein - I seem to need a lot of protein when I nurse, and baby is nursing a lot because she's teething and she's got a cold. Watching this fish trial carefully, too. Hard to tell right now, but I can't risk her getting too irritated by it because I need her to be in good shape for our vacation. |

npl answered pretty well. Spray a small frying pan with PAM. I also put a lid on the frying pan to cook the top a little more quickly. I had mushroom, onion and cheese. Hope you get to have one. Enjoy. I think tonight is pasta, probably baked ziti. |

Oh, and I find it works nicest if you add a little milk and seasonings to the eggs and beat them well before cooking (you get a fluffier omelette) |

Do a Mexican night. Shopper's has good kosher nacho chips, and use can get whole grain kosher wraps at No Frills. President's Choice salsa is kosher. Get some avocado, mash with Zesty Cilantro pesto from Sunflower Kitchen (available at Ambrosia). Do a spicy black bean dip with lemon juice, hot pepper, cumin, some more zesty cilantro pesto, a drained can of black beans, olive oil and water. Whoever eats dairy can have some melted cheese. I also do a "mexicassarole". In a cassorole dish, layer jarred salsa, uncooked couscous, drained and rinsed beans, a can of corn, and drained diced tomatoes. Add spices as desired. Add cheese on top for half. |

Kids don't like it - which is a pity because dh and I do! Tonight I did fish sticks for the kids, and a curried rice pilaf from a box, with added veggies and canned salmon for dh and I. Tomorrow we might do Spanish omelette for everyone. |

I stuffed manicoti with creamed spinach, made 3 different pans- one i filled with more creamed spinach and a little water and shredded daya, the second was marinara sauce and daya, the third one contained mushroom soup/sauce and american cheese probably making calzones tomorrow and salad. |

I think we are going to have a big salad tonight because the kid who doesn't like salad asked for it! Salad bag, boiled eggs, boiled potatoes, maybe some quinoa if I buy some, some other veggies cut up in there. I might do it as a salad bar instead of a mixed salad, so everyone can be happy! |

Wow...it's so easy to cook in our house! Only PN are a problem and they're banned...bring on the dairy. Everyone's in heaven. (As barbeque is mandatory in this house on the 1st Monday evening in August, we had one. One of our guests coined it a "pareveque", as everything was soy/vegetable based. Best part...REAL dairy ice cream for dessert!) |

Sorry - just realized a bunch of my suggestions had tomato. Bean dips may still work. Store-bought hummus often has soybean oil but homemade should be ok. For fish, I like pan-frying sole fillets. I buy them frozen, and just take them out to defrost in the fridge before I go to work. Since they are so thin, I just heat some oil in the pan, add some fillets, add a cube of frozen garlic, flip after 2 min, and cook an additional minute. It's one of the few things that everyone in my family likes, and it's super fast and easy. Consider replacing other grains with quinoa, which has a higher protein content. For those who can eat soy, Genesoy protein powder is good in shakes and smoothies. |

Sobey's had the regular Daiya a few weeks ago, but it seems like they aren't getting any new packages - whatever is left is left - and that's the pepperjack stuff. Have you tried superstore? I was so excited to find this brand until I read the ingredients...it has coconut in it. Anyway, I'll worry about dairy-free alternatives when my baby is old enough to even eat it and hopefully by then he will have outgrown his allergy(ies).... |
