Planning dinners; in advance or every day?

Does everyone plan dinner menus in advance?
If find that I have to plan in advance, or eat hot dogs or eggs or something because if I decide to make something during the week - I don't have time to go to the store to buy ingredients, since I don't have any time when I'm not at work or with the kids (And i can't go to the store with the kids, I pick them up in the afternoon and it's already time for them to eat, they're too tired and i'm too tired to go to the store then).

I do and I don't. I will become flexible. So if someone is sick (this week me) or if someone had a super hard a and brings that super hard day home with them so my afternoon is dealing with that instead of cooking. Or yesterday Zu had to get a tooth pulled and frei a cavity filled so they wanted mushy foods.

Certain things are staples in my house. I buy in bulk and keep on hand. Things like rice, flours, oats, pasta, potatoes, sweet potatoes, and onions. I also buy my meat in bulk which saves a lot of money. The order goes in about every 8-12 weeks so I rotate the cuts I order so I have choice. The stand up freezer paid for itself within 6 months. I also bulk cook things like soup, chilis, and stews and have on hand. Fresh veg and fruit besides daiya is the bulk of our grocery list. I buy whats affordable and fresh. Since I rarely use a recipe I can be flexable from my original plan.

I make beef stew (can last 2 nights), turkey meatballs (two nights), chicken cutlets/shnitzel one night or two.. We always have pizza one a week as well. Once you are in cooking mode, it's easier to do it all at once and do one cleanup instead of starting over every day. We'll also make chilis sometimes as well. I do tend to make the side dishes fresh as well as the veggies, but it's nothing compared to making the whole meal!

Sometimes I make a great pulled chicken recipe. I make chicken breasts cajun spices (or any you prefer) and bake it in the oven. Then, when it's done, I rake it out with a fork until it's pulled. Then I put it on a hotdog roll or hamburger bun. Big hit!

I've done that but in the slow cooker, I layered BBQ sauce, onions and cutlets. Really great!
