My mom is here so I haven't had much time to post. I made-

challah
broccoli "cheddar" soup (made with daiya)
a Turkey
mashed potatoes
asparagus
cranberries
sweet potato (for Mo)

peach pie and whipped topping

We also got Mo challah and a special carrot cake from an allergy bakery thats kosher and safe!

For lunch we had turkey sandwiches while the sides cold.

Great about the cake.

We had lots of company: we were 12 for Friday night and 11 for lunch

vegetable hamantashen (took pizza circles, filled with sweet potato or broccoli and made "hamantashen"}

fruit, candy, and a very unallergy friendly cake full of nuts that we pulled out of the freezer brought by a friend a few weeks ago that didn't get eaten

Estie - I love the idea for the hamentashen - I might make that for the purim seuda (we are probably going to be at least 15). Do you think they would freeze well?

One of my biggest pleasures it that acme sells a safe pizza dough for our allergy set. Would love to see the prep for the filling.

Dough (I never tried it)
3 cups flour
1 egg
1 tsp vinegar
1/2 cup oil
1/2 tsp salt
1 cup hot water

Combine ingredients and knead until smooth. Refrigerate for 1 hour

Broccoli filling
1 lb broccoli
1 egg
1 tbsp mayonnaise
1 tbsp onion soup mix
1 1/2 tbsp flour

cook broccoli in a minimal amount of water with salt. Drain broccoli well and mash. Combine with the ingredients for broccoli filling

Sweet potato filling
2 medium sweet potatoes, cooked and mashed
1 egg
1 tbsp mayonnaise
1 tbsp onion soup mix
1 1/2 tbsp flour

Combine ingredients

cabbage filling
1 lb shredded cabbage
3/4 tsp salt
1/8 tsp pepper
3 tbsp oil for sauteeing
1 tsp sugar
1 tbsp flour

Saute cabbage in oil. Add rest of cabbage filling ingredients

Divide the dough into 3 parts. Working with one part on a well floured surface, roll out to 1/4 inch thickness. Using a 2 1/2 inch diameter glass, cut 12 to 15 circles. Place a tsp of filling into the center and fold up to form a hamentash shape.

Repeat with other 2 sections of dough and other 2 fillings.
Brush with beaten egg
Bake at 350 F for 25 to 30 minutes.

I modified this recipe a lot
1. I used commercial pizza circles - no rolling
2. I smashed the sweet potato and added cinnamon and nothing else
3. I smashed the broccoli, added and egg and a small amount of onion soup mix and that's it.

The quantities for the filling are way to high, I used 1 sweet potato and a 1/2 bag of bodek broccoli and still had extra when I used it for 24 circles total. I didn't try the cabbage because I didn't think I'd have any takers in the family.

I wonder if it would taste good in wonton wrappers instead. I used flaky dough last year and the pizza circles were better.
