2 x 36 meatballs (no sauce)
3 whole chickens
2 x 0.5kg cooked, seasoned chicken breast (actually, in my fridge because I only did it last night, but it will make it to my freezer)

1.2kg #8 meat (no clue what part it is in English, the package says "muscle" but it must be upper limb, like right below the shoulder?)
2kg chicken breast (whole, no bone)
7-10 chicken necks
1kg minced/chopped turkey
0.75kg minced/chopped meat

Also, 1 package of ready-made ravioli that I bought Shavuot time...clearly for a different meal but will also be used for YT. I don't think I need anymore meat until after YT!

Yeah, we've got a family of 5 coming, but they're not eating all the meals with us. Actually, it looks like it's just us the first night.

jealous!

Honestly, I haven't even made a menu. I have meat uncooked in my freezer. LOL I am saving the ground beef (have only 1 5lb pack left) for Simchas Torah time so I can put up chili and stuffed cabbage. Need to also start packing the freezer so dh and mil don't have to cook after the baby comes and I am not up to it. I try to put 2 months worth of dinners and Shabboses away.

I have one noodle kugel and one chicken in sauce. That's not enough for most of the meals, as I ended up getting lots of guests!
So, I have Friday night done except for veggies.
Still have to figure out first night (just MIL - side dishes are simanim) which will be repeated at second night (poss. one lady guest); First day lunch - some guests are bringing food; second day lunch - guest list not complete, but already 2 extra really little kids and shabbos lunch.
Once I figure out what heating/cooking appliances I want to leave running, I can figure out menus. Probably using crockpot and hot plate.
Plus, I need to make 3 birthday cakes - one for ds1's english birthday tomorrow (supper with MIL), one for his party on Sunday (lego shaped) and one for his Hebrew birthday on 3 Tishrei.
Guess it's time to dig up last year's menus and tweak them.

I'm limited in how much I can cook and freeze because I have limited freezer space, and it's full of regular food. As I take food out to cook with it, I'll make more space to freeze prepared food, but it takes some juggling.
I'm hoping to have kugels and chickens/meats cooked and frozen, so I just have to do the challos, other sides and desserts closer to the time. Or, I might do my desserts this week (as I'm baking cakes anyway) and leave some of the meat/chicken till right before yom tov. Depends on what I find on sale.

So not much, but I wanted to say that YEARS ago, years and years, my parents gave me their old freezer. It doesn't even self defrost, but we kept it "just in case". We've decided to plug it in and use it. We're going to try making trips to Queens or Brooklyn and buying meat in bulk. So excited!!

What siman is spinach? This is a new one for me...

The local supermarket has chicken specials (whole chickens for NIS2-4/kg depending on the week, if you spend NIS150 in the rest of the store), so I usually buy a chicken or two a week...and one chicken is enough for the 5 of us for Shabbat with a serving left for DS#1 for lunch on Sunday...so I have several spares. (That's $0.25-$0.50/kg or 12-25c/lb when you spend over $30...considering just my dairy comes to almost $15/week, I usually make the minimum easily.) The Israelis also haven't figured out yet that the white meat is healthier, so I can get chicken breasts (bone out, but otherwise not cleaned) for around 9NIS ($2.75)/kg at the same specials.

The fact of chicken in my freezer is more of a given around here; I just wish I could figure out how to avoid the supermarket before YT next week. I think the closest I can get is to stock up on all the non-perishables (did that) so I can go just for milk and produce on motzaei Shabbat...no one shops motzaei Shabbat around here...

Wow! Great price on chicken! It would be worth it for me to buy a stand-alone freezer for those prices. I'm stocking up because the cut chickens (nothing fancy - just cut into 8 pieces) are $6.15/kg! And if I have no other protein and the baby is hungry, we finish almost a whole chicken in a meal. Boneless skinless - which I like to use for yom tov because of the problem of space in the composting bin and not being able to tie up the bag securely when it's full, and having to leave the composting bin outside because we can't open the garage door on shabbos/yom tov - well those haven't been much below $19/kg for so long, which is the same as the cheapest cuts of red meat. Fortunately, I have a few packs in the freezer, waiting to be used.
