I'm trying to keep it from being fried or wrapped in pastry (6 yom tov meals to fit in!). Bring on your suggestions.

Do you do dairy? Fish? I will probably have both lunches dairy - salmon one day and pasta the other. Milchig salads like greek with feta.

Depending on the weather I will make different soups like onion or potato leek.
Make lots of salads. I find for the nights that the simanim can serve as the appetizer and I can go straight to soup or even the main course.

I also make vegetable side dishes so to have less fattening choices (still serve the starches or my kids will kill me). Broccoli (bodek frozen), zucchini, string beans. You can make rice many ways, potatoes don't have to be fried or pastried (just cut and bake them with the meat)
if you need more specific info just ask - I haven't even made my menu yet - pretty dumb, I think I am still in denial.

Pot roast - you can cook it with potatoes, parsnips, carrots, turnips, etc.
The liquid in the pot roast makes reheating easy, but if you have to cook it on the day, then you can put it in before you go to shul and have it ready when you get home without babysitting it.

I'm a big fan of one-pot meals. I'll probably make my usual - chicken, rice and veges - for two meals and...not sure what to do for the third. We're going to my parents for second day lunch and my ILs for shabbos.

Succot will be a whole 'nother story. My ILs are staying by us and we may host other people as well, so I'll have to be a bit more creative. Which reminds me...we need to buy a succah!

I've done spaghetti and meatballs, spaghetti and meat sauce, sweet and sour meatballs with rice, meatloaf with potato kugel and greenbeans and roast with veggies.
Lunch @ our house needs to be kid friendly and not rediculously expensive plus, easy for me to heat up on YT and that doesn't get ruined if pre-made (i'll do it on YT if it's s/t real simple like rice, spaghetti or green beans, but not the main dish part since I only leave on one flame and not my oven)

we usually bbq on yom tov:) and then i use disposable dishes. we usually then have chicken wings and/or hot dogs for children, oriental meatballs and sometimes also steak. + potatoes on bbq, veggies on bbq, and all kinds of salads (did i mention before i am married to a sephardic Israeli? :))

for shabbos lunch after RH we are invited by USA friends, i am delighted! and they even allow us to bring our guests (we have a family of 4 staying by us for all of RH), so i am thrilled:)

We also do a lot of noodles, meatballs, meat loaf, and those kinds of things. I admit, I always make franks in a blanket cause I know the kids will eat. One day I try to do make your own pizzas- have everything ready, they make them as soon as we come home, by the time salads/soup are done the pizzas are done as well. The kids love this.
