Need Easy Shabbos Lunch menu/recipes

So, having decided that I'm still recovering from dh being away most of last week, and needing to conserve energy for him going away again on Sunday, plus having yet to get started on baking for the bat mitzva, I'm suddenly in the position of having to cook for two high-profile rabbonim this shabbos - yikes!
Not totally as bad as it seems.
Friday night, our cousins are hosting a big Rav and invited us to join. I'm taking a broccoli-cauliflower kugel that is very easy, and can be made from frozen bodek veggies.
Shabbos lunch, on the other hand, we are having a Rav who is high up in the local Kashrus authority. Whilst it's a big compliment that our shul Rav considered us careful enough to feed this Rav, it's a big responsibility. Whilst I know, objectively, that I'm careful with my kashrus, we don't keep some of the chumros like kemach yoshon, etc. Oh, and our local kashrus authority is very careful about bugs in fruit and veggies!

So, I'm looking for easy recipes that can be prepared on Wednesday, and where I won't have to be so careful about kemach yoshon, and any nuances of kashrus that I might not be so well-versed in. Also, it's a very short shabbos, and dh wants a simple meal that will be quick to eat. I don't mind buying some of the food prepared. Meal should be kid-friendly, as there will be quite a few little kids eating.

So far, this is what I thought of:

Challah - Dd and I are doing a mother-daughter challah baking workshop at shul this week, so we will have fresh homemade challah!

Gefilte fish - either buy the pre-cooked, or cook a log myself
Salads - green salad with lettuce from a pre-checked bag,

Main course:
Cholent - figure out which barley is yoshon - anyone in the GTA know?
Meatloaf - make with matzo meal to avoid yoshon
Kugel - buy ready-made

Dessert:
Melon slices
Cake and cookies - bought.

Any pointers? Things I haven't thought about regarding chumros?

Thanks Realeez! I'm guessing I'm safe to go with the COR standards for a COR Rav, no? I know that in some places, the mashgichim and Rabbonim are more makpid than their hashgacha, if that makes sense. I don't get that impression in this city, though.

In some ways they are more makpid but I wOuld think its safe to assume you can go by the CoR list for Yashan codes :)

Thanks Realeez! The reply I got from my email confirmed my impression of a down-to-earth person who doesn't want to use chumros as a source of tirche for others. Off to buy the correct barley, if I can find it - does Sobeys have any, do you know?

No clue - sorry!!! Kolbo is near me and is a great source for yashan. - I'm not makpid but do buy for shalach manos or if making a baby meal for someone who is!

I'll see if they have it - I'm almost out of barley anyhow. And if not, I can just use rice, which is what I do when I need to make it barley or wheat free for allergy reasons.
I'm hoping that the challah we make tonight at shul is yoshon. And then that just leaves dessert. A friend might bring, in which case she'll bring from a yoshon bakery. Otherwise, I might just indulge in Grodz - taste of home, etc!
