Does anyone know how to calculate how much food I need to order for a party? I'm trying to place orders for bulk salads, like tuna, egg, fruit salad, etc. I have no idea how much to buy! If you have a tested formula, or you have a link to a website that tells you, please enlighten me! Naomi |

Why don't you call a restaurant that does catering and ask (pretend you might order from them) kosher or not, eg: Call Cafe Shelli or Centre Street Deli and say you are having X number of people, how many pounds of each should you order, let them know what else you'll have and they'll give you an idea. They do this all the time and if you get 2 different opinions you can see of they are similar. I would kind of assume 1/4 cup or each salad per person for the tuna, egg salads etc...people take a scoop with a large serving spoon, even if they don't finish it all.... |

Dessert is 2 slices of large items per person or 4 pieces of small/bite size items per person. (So 2 slices of pie/cake or 4 cookies/brownies/squares/petit fours.) |

Thanks Neelie - after I posted, I thought to ask the person I'm dealing with at Elite Salads (our shul uses their tuna and egg, so I know they are decent-tasting). Good idea to ask somewhere else, too. Cafe Sheli and Tov Li do ready-made platters, rather than bulk food to put out yourself, so I'll have to try somewhere like Ely's. Any ideas who else in the city sells the salads in bulk? Marion - thanks for the dessert info - I don't think I need as much as I had originally thought, which makes the baking so much easier. Really should get started, but that's what Sunday is set aside for! |

I found this chart but the quantities seem small. Especially for the desserts. Maybe because I'm making a buffet rather than a sit-down, plated meal? What do you think? |

It might be a halachic problem to call someone that you have no intention of using. Unless there is a chance you will use them if their price is good. I do think that caterers tend to overestimate. Like, I don't know anyone who actually needs a 1/4 pound of deli in their sandwich. or anyone who takes 2 WHOLE pieces of pie. |

ItsMe - good point about the halacha. I'm good on that, because our back-up plan is to just order platters (I wanted to do that, before dh decided we should be economizing further). You are probably right about the overestimation. And with 2 weeks to go, I still haven't had rsvp's from half the family. DH thinks many of them won't even decide till the last moment. Given the date and time, I wonder how many will decide they can't get here after a party the night before? Sad, but these are cousins of dh who we only seem to see at simchos. As for the dessert reception - considering how late I'm getting started with the baking, I'm not too worried about having leftovers that need to be frozen/refrozen. Mostly it will be cakes/cookies, and if I make the chocolate mouse, it's a crowd-pleaser, so I'm not expecting leftovers! |
