Barbie, to be honest- I LOVE pesach cooking. I do live in the kitchen and not want to see my kitchen for a few weeks later but I love how pesach pushes me to be extra creative and fun.

:) My kids took after me and have 3 things they like, chicken nuggets, waffles/pancakes or meatballs. Cooking for them makes me crazy. Little guy likes pizza, big girl hates it. She likes hot dogs, he hates them. They don't like schnitzel... they will eat yogurt, so that will be a staple during pesach. But I don't bake since I don't want them to have so much sugar so it makes things difficult. Also, my dh does not approve of noshing in general so I don't keep snacks around except for stuff for them to bring to school. Pesach snacks will be tricky.

In our house, pesach snacks are fruit and dried fruit (and nuts for those who eat them)! That, and the occasional serving of potato chips as a special treat, especially erev yom tov. Otherwise, they can eat real food, like matza sandwiches, leftover real food, boiled eggs, yogurt, etc. We eat gebrokts, we does give us more choices of filling foods to eat at snack time.
