i sub it for milk in pancakes or for milk in general for all baking receipes.

Thanks! I've seen to many uses for it... putting it in the fridge, then skimming the top and whipping it up, using it in smoothies, thai cooking (since it's pareve), I need suggestions!

i buy coconut milk from trader joes, i don't think it is possible to skim it ; (

I make my own coconut milk, since the ones here with a hechsher (which the kosher store just started carrying very recently) are prohibitively expensive. I can skim it if I leave it sitting around for a while. I use it in my favorite curry chicken recipe. (http://www.epicurious.com/recipes/food/views/Curried-Sauteed-Chicken-Chunks-with-Coconut-Milk-104122 but I tweak it a bit.) My very picky kids love it.

You can skim the top off. It's kinda cool. I was lazy and just dumped the whole can into the blender with a frozen banana and some cocoa powder and almond milk. So yummy!!
