Still procrastinating - mostly waiting to see what state everyone is in from this stomach bug and what meat/chicken I buy. Shabbos day is supposed to be hot, so this may be the first no-cholent shabbos of the season. And I'm hoping to double-cook so I have food started for yom tov. But, I haven't started cooking yet, have a meeting today, and not sure if I will have time to both shop and start cooking till tomorrow. |

Oh no! So sorry to hear it. If it's any consolation, those in the family who do not have a history of gastro-intestinal issues recovered quite quickly. My 12yo dd was better in about 24 hours, and I took less than 48 to be basically back to normal. I think it has lingered in the other kids because of their underlying gut issues. Iy"H you'll all be enjoying regular food by shabbos! I only did half my grocery shopping, so here's what I have so far: Fri Night: Roast chicken with roast potatoes Meatloaf Some kind of green veg. Shabbos Lunch: Potato Kugel (bought) Turkey shnitzels Meatloaf Some kind of green veg. Shalosh Seudos: Gefilte Fish Salads Buying challah and something for dessert tomorrow, and will figure out what green veg I'm doing when I see what's nice at the store. |

Sara - recipe please! I had an idea to make recipes using dairy subs for our fleishig yom tov meals. Although everyone else can eat the real thing, and we will have some milchig meals, it seems like the perfect opportunity to make parev dishes that I can use for all the meals. I might do a meat lasagna and put daiya on the top, too. Just to confuse everyone! detkismama - let us know how the canned pineapple "cheesecake" turns out. I recently found out that I'm not allergic to canned pineapple, so I'm looking for recipes that use it! |

Are you allergic to pineapple npl? I am very allergic to it, I used to be able to eat canned as it is cooked, but now I cant. Actually now its so bad I can't breathe the air in a room with pineapples. And I react to the smell of pineapple juice(canned) . :( . I am mentioning it, because I think that part of the reason the allergy has become so bad is because I continued to eat even canned pineapple for years, and my body just couldn't fight the reactions anymore. So be careful. |

Pineapple cheeseless cheezecake turned out ok. Kids didn't like it, except the whip cream on top, but adults enjoyed it, so I suppose it has a "grown-up taste" ;) Here's the receipe - Ingredients 2 pie crust 1 tin pineapple with juice 4 eggs 1/2 cup sugar 1/2 cup flour 1/2 cup oil 1 tablespoon vanilla sugar (1 package) 1 teaspoon baking powder Topping: Cherry pie filling (optional) I skipped the pie filling and added whip cream on top Preparation Puree the pineapple in a mixer, then mix all ingredients in a bowl together. Pour the filling into both pie crusts. Bake till light brown on top. When cold, smear the pie filling on top. |

UTMJ Thanks for the warning/reminder. My cantaloupe allergy is that bad, too. But, it started off much worse than my pineapple allergy. As a kid, pineapple only ever came from a can, except for a couple of times when we were served fresh and I got a few spots around my mouth and it felt a bit acidic. Nothing like my other allergies, but when I started reacting badly to other foods, I cut it out totally. Then I accidentally ate pineapple (I think it was even fresh) and nothing happened. So, I eat small amounts of canned pineapple that has been cooked again - in a cake or kugel - but not often. And I am not eating fresh deliberately. detkismama - thanks for the review. I think my kids will probably feel the same way as yours, but it's on my list of lighter desserts I'd like to try. |
