Spring Appetizers

I'm looking for some spring appetizers. Any ideas? Something seasonal, any ingredients, for adults, not children. Dairy or meat or pareve, whatever...

Fruit or salad would be good.
Anything from melon wedges served cut but still in skin, to fancy fruit salad in individual dishes.
Salads - could be greens/lettuce with salad veggies and toppings (nuts/seeds/fruit), couscous or quinoa salad, or israeli salads, dips and pickles/olives served with pita wedges.

Ooh, these are good! So far I picked up (before I read this, bc I realized that I don't have my normal Friday to go shopping bc they kids are off from school as of right now til Monday!!): vegetarian egg rolls from TJs, I'm going to pass them off as "spring rolls" and then I got this recipe from Pinterest with pasta, avocado, basil and other yummy ingredients.

Sushi salad in martini glasses
Never thought to present sushi salad in individual servings like that - I bet it's so pretty and elegant!
Realeez, can you share your sushi salad recipe?
I'm taking one to our hosts on yom tov, and I'm looking for options that allow me to do all the chopping on Friday, but assemble on Sunday morning.

The avocado-tomato-basil salad works really well with mozzarella, too (the kind that's white and comes braided, not the sliced cheese for sandwiches).

I saw it, I have to check to see if I repinned, but I tend to think of strawberries and mango for summer.. are they in season now? That's on my list for our next group meeting. Spring is tough..

Sushi salad

2 cups sushi rice or Calrose rice, cooked according to package directions 1 avocado 1 red pepper
1 mango
1 sheet of nori, toasted
Cut avocado, mango, and red pepper into tiny pieces. Tear or cut nori sheet into tiny strips.
Dressing:
1/3 cup rice vinegar
1 tbsp. sesame oil
1 tsp. minced garlic
1 tsp. minced ginger
1 tbsp. soy sauce
Mix ingredients and blend well with rice. Add vegetables and stir gently.


I like to put a scoop of the rice in a martini glass and then sprinkle the veggies on top. I sometimes use candied ginger too.
