I'm cooking in advance for my MIL. She will be unable to cook for herself for a little while. For the beginning of the time she needs the food, it's best if she has meals that can be eaten cold. Once she's ready to heat food for herself (or if she ends up getting help) then food that can be reheated is good. I don't know yet what kind of cooking facilities she'll have (microwave, oven/toaster oven or stovetop), so ideas for recipes that can be reheated any way would be good (I'll package appropriately once I know how it will be reheated). So far, I've thought of tuna patties, hearty soups (with beans, lentils and root veg), and pasta-tuna casserole. Any other ideas in either category (eaten cold or frozen and reheated in any heat source)? |
