Well, with this generation starting to wind down, and the 360 being released in a few days...
What would you all consider the best console game(s) of this generation, and why?

I would say at the top of the list is Katamari Damacy. Not trying to brown-nose or anything, but it was truly the most fun and addicting game I played this generation. It also proved that photo-realistic graphics (or lack thereof) have no impact on how much fun a game is.

Second best (or maybe its a tie) would be we love katamari, for exactly the same reasons.

Third, in my opinion, is Resident Evil 4. I played both the ps2 and the gc version, and have to say it is one of the best games this generation. The controls are made for the smaller number of buttons on the gc, but the button layout of the ps2 is much more comfortable. But the gc version is so much prettier. not to say the ps2 version wasn't pretty, but they downsampled all of the textures from 32bit to 4 and 8bit, so its about 1/4-1/8 as pretty XD, but it is still a great game.
Graphics don't matter, but when they have a fighting engine that's nearly flawless, bring on the pretty textures.

I feel that some of the Nippon Ichi games deserve a spot in the list. In the order they were released in the US: Disgaea, La Pucelle Tactics, and Phantom Brave. Very strong SRPGs, with massive replayability and hilarious storylines. Great character development, and *gasp* decent voice acting.

Of course, both KD games rank right up there, and while it's technically not "current gen", Final Fantasy 9 might as well have been.

It should be pretty obvious that I lack a GC, GBA, or XBox, but that's due mainly to the fact that I wasn't interested in any games for any of those systems. I'm very much an RPG/strategy player, and the few titles of that type released for the other systems were distinctly lacking in my opinion...

Well, I'd definitely have to put Katamari Damacy/WLK at the top of my list. I can't think of any other games I've had that much consistent enjoyment from. For me, Katamari has the perfect blend of challenge, whimsy, and outright silliness. It's challenging without being hopelessly frustrating, and weird without being eye-rollingly ridiculous. The mood, the graphics, the music, and the gameplay all fit together perfectly, for the most part, and that's a rare thing. Most games have at least one area where they fall short, but KD was more or less the ideal gaming experience, for me.

Another game I thought was great, if rather underrated, was Breath of Fire: Dragon Quarter. I didn't think it was all that at first, but it's proven remarkably addictive. I keep going back to it, for the music, for the graphics, and for the gameplay. It's got a lot of interesting innovations, and the challenge factor is much higher than with a lot of other recent RPG titles, which one can play half-asleep with no problem. The overall atmosphere works very well, too. In the previous Breath of Fire games, the two-dimensional characters and paper-thin plots left me unsatisfied, but this time around, the spare dialogue and sketchy characters added to the feeling of haste and urgency: no time to get acquainted--we've got to get out of this bunker!

Unfortunately, there are a few pitfalls: the environments are all pretty similar, and the game itself is rather short. You unlock more of the story by playing the same short storyline over and over again, rather than by adventuring through a longer game, which is a bit disappointing. However, the gameplay is absorbing, and most of the music is very nice. I loved the character and monster designs (in spite of many of the monsters being retreads from previous Breath of Fire games), as well.

I suspect Ico and Shadow of the Colossus belong on this list, too, but I haven't played either yet. They're both on the agenda, though, when I have a bit more money to throw around.
