Okay correct me if Im wrong, but the funtastic models do NOT support s-video correct? doesn't that make it a moot point? Surely an old model outputting s-video has a superior picture to a funtastic composite picture.
I think you're confusing S-video output with RGB mod-ability... (I could be wrong on this point, but) I believe it's primarily the older N64 consoles that can be modded to have an RGB output. As far as I know, all NTSC N64 consoles will work with an S-video cable.

Oh, now I know what you're thinking of... it's the revision SNES (the mini) where Nintendo removed S-video output. Something I had to learn of the hard way. >_< Twice now. >_< >_<
