Record/Stream on PAL Console

Greetings my fellow friends.

This will be a rather long post about me running into difficulties, while trying to record and stream from my N64 PAL Console. I will try to keep it as short as possible while also trying to not leave out information.

ANY help is more appreciated than you would think.

So, after reading numerous articles and watching several videos, I still can't come up with a good solution. First of all, I know, Framemeister Masterrace, but my poor student butt can't afford it, sadly. I also know the sad truth that N64 PAL consoles don't support RGB, well some early french ones can be modded to true RBG, I believe, but that would also be quite expensive. Well, nowadays I heard that any PAL consoles can be modded to RGB? I've found some sites that offer this service, but I don't know if it's legit or not.

What most people do is: av to a hdmi converter, to a capture card. I purchased a hdmi converter I saw in a couple of vids. Quality is fine but the performance is not. The video is choppy/laggy.

What I'm currently wating for is for my s-video cable to arrive: http://i.ebayimg.com/images/g/b74AAOSwEzxYP9dC/s-l500.jpg (I only found out afterwards that http://www.consolegoods.co.uk/ offers special made s-video PAL cables. Maybe I'm copping that one too, just for reference.) In order to record/stream I will have to buy something like this https://images-na.ssl-images-amazon.com/images/I/61JTkkg-4XL._SL1500_.jpg But do these s-video to HDMI converters really do any good?

Another option would be s-video/composite to Scart https://images-na.ssl-images-amazon.com/images/I/71U-1mVokfL._SL1500_.jpg and then a scart to HDMI Converter https://images-na.ssl-images-amazon.com/images/I/71AkrynLcvL._SL1500_.jpg (I've read that simple scart to HDMI cables are 100% scam.) But is this setup any good too?

I mean I could also just go with composite and a dazzle, but that is a bit low quality for me.

Any advice is more than welcome.
