You can set a model to have a Screen Shader applied to it like the water in the demo for instance, But is it possible to apply a screen shader to a partical system?
So in effect you could have a waterfall that distorted the wall behind it, or sumthing like that.

This question contains some wrong assumptions. You can't apply post screen shaders to single objects. Post screen shaders always effect the complete screen (or a complete render target texture). Only usual (3D) shader effects can be applied to single materials of model objects. This is possible for model objects only. A future version of Ultimate 3D may actually have pixel shader support for particle systems, because that would be in fact quite useful, but for now it's not possible to get that. What you can do is the following: You can render particle systems to a render target texture through an extra camera and then you can use this render target texture for the post screen shader. I did this for the hot air post screen distortion effect in the tech demo. It's looking cool.
